Basic Responsibilities: Produce food to highest level in quality and presentation. 

Main Responsibilities


  • To ensure successful day to day running of the Kitchen
  • To complete jobs quickly and professionally
  • To ensure that all meals, snacks and functions are correctly prepared, cooked and served to the standards set by the Head Chefs
  • To prepare mise en place for all areas of work
  • To ensure that all areas worked in operate a ‘clean as you go’ policy
  • To be responsible for your section and ordering as Chef de Partie
  • To assist in recording all temperature checks on a daily basis
  • To carry out all duties as set by the Head Chef on a daily basis
  • Ensure ingredients are used correctly with minimum wastage
  • Understand and use correct portion control
  • To ensure sufficient stocks of all materials are being rotated in accordance with the use by date
  • To ensure that all maintenance problems are reported
  • Help with all aspects of functions and tournaments 
  • To understand the catering operation and the importance of guest requirements that needs to be fulfilled at all times.
  • To proactively promote and exceed standards
  • To effectively communicate with the other departments and colleagues, suppliers and contractors to ensure that all information is communicated to the right addressee.
  • Midday briefing is held on a daily basis and communicated to all employees
  • To ensure all staff are thoroughly conversant with the menu and attend the monthly menu tasting session to gain a sound understanding of all dishes on the menu and daily specials.


Performance Management

  • Participate in the annual performance review and other targets.
  • Consciously contribute to effective team working at the management and team levels and encourage colleagues to behave likewise.
  • Contribute to a climate in which innovation and creativity are encouraged and new ideas implemented and rewarded.
  • Constantly focus on the satisfaction of the Guest as our main purpose.
  • Report on disciplinary matters to the Line Manager and to handle issues in a professional manner.

Environment, Health & Safety and Security

  • Succeed always in minimising waste
  • Ensure safe working practices in accordance with the correct policy and procedure
  • Properly handle and account for keys and ensure protection of residence room numbers
  • Have full knowledgeable and adhered to all policies regarding H&S
  • Attend all Health and Safety training as instructed by the Company and Group Operations Director.
